Culinary Corner
It’s not too late to whip up a quick and easy dessert to take along to an Easter dinner tomorrow like these tiny little cheesecakes. Just the right amount too!
Blueberry Lavender Cheesecake Mini's
Ingredients:
- 6 shortbread cookie fingers, finely crushed (about 1 cup)
- 1 Tbsp. butter, melted
- 6 Tbsp. blueberry preserves, divided
- 3/4 cup blueberries, divided
- 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 1/2 cup plus 1 Tbsp. sugar, divided
- 1/2 tsp. vanilla
- 2 eggs
- 8oz of Cool Whip
- 1 tsp. dried lavender flowers
Directions:
- Heat oven to 325°F.
- Combine cookie crumbs and butter; press onto bottoms of 12 paper-lined muffin pan cups, adding about 1 Tbsp. crumb mixture to each cup.
- Add 2 Tbsp. preserves to 1/2 cup blueberries in small bowl; stir gently to evenly coat blueberries with preserves. Set aside.
- Beat cream cheese, 1/2 cup sugar and vanilla in medium bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Remove 1-1/2 cups batter; reserve for later use. Add 2 Tbsp. of the remaining blueberry preserves to remaining batter; stir just enough to slightly swirl preserves into batter.
- Spoon reserved plain batter evenly over crusts; top with preserve-coated blueberries, then swirled blueberry batter.
- Bake 18 to 20 min. or until centers of cheesecakes are almost set. Cool completely
- Refrigerate 2 hrs.
- Add a dollop of Cool Whip for that perfect topping!

TODAY'S TIPS, TRICKS & TECHNIQUES
Needles-Needles-Needles – What to use???!! It is SO confusing! For most of my sewing life, I used the same needle for everything I sewed, with the exception of stretchy fabrics. I knew enough to know that a regular needle would pull and tear the knit fibers. But, when it came to cotton fabrics (of which there are many weights) and thread types (there are too many to count these days), I didn’t realize the quality of my stitch would be impacted by choosing a different needle point, needle size, and so forth. Now, if my stitch doesn’t look right—railroading, too loopy, creating a bird’s nest underneath—the first thing I do is double check that I am using the right needle for the activity (piecing vs embroidery), the thread type and weight, and the fabric weight and finish. That’s A LOT TO REMEMBER!! And, it really does make a difference! Superior Threads did all the work for us and put this information into a handy-dandy chart that I keep in my sewing drawer next to my machine where I can grab it quickly if there’s a problem. And, I’m sharing it with you right here! 😊
