Culinary Corner

I love to pull out the BBQ, clean it up for the summer and grill our first summery meal in May. This is one of my favorite sides that can be roasted on your grill or baked in the oven if you don’t have room on your grill.

Roasted Parmesan Corn on the Cob

Ingredients

  • 6 ears of corn
  • ½ C Mayo
  • 1 C shredded parmesan cheese
  • 1/2 T chili pepper
  • 1/8 tsp black pepper

Directions

  1. Heat oven to 400°F; or fire up your BBQ Grill.
  2. Cut 6 pieces of tinfoil twice the size of the ear of corn.
  3. Stir all ingredients (except the corn) in a bowl until it forms a paste.
  4. Rub about 2 tablespoons on each ear and wrap the foil around it and seal.
  5. Place directly on the grill racks for 15 min, then turn so both sides are roasted. If baking in the oven, bake for 10 minutes on a baking sheet; turn and bake 10 minutes longer.
