“THE LUCK OF THE IRISH”
Did you know that St. Patrick’s Day is both a religious, and cultural holiday, held on the 17th of March--the traditional date of the death of Saint Patrick the foremost patron saint of Ireland. It has been celebrated in America since the 18th Century. The “Luck-O-The-Irish” is a phrase that was used to describe the early Irish settlers who came to America during the gold rush. The Irish people were very hard working and discovered large amounts of gold after leaving their homeland due to famine in Ireland. However, they were not recognized as much for their hard work as they were for their discovery of gold! And that's why the Irish are considered LUCKY.
Culinary Corner
St. Patrick’s Day is the Perfect time for Corned Beef and Cabbage. This is a great recipe for slow cookers.
Ingredients
- 1 3-4 pound corned beef brisket w/seasonings
- 1 onion
- 4-5 potatoes – peeled and halved or quartered
- 3 cloves garlic
- 2 bay leaves
- 2 large carrots
- 1 head of cabbage
Directions
Cut the onion in slices and chop the garlic and place in the bottom of the crock pot. Place the corned beef, fat side down on top of the onions. Fill the crock pot with water until it is above the corned beef and add the seasonings to the crock pot. Cook on low for 6 hours. Add the potatoes, carrots and cabbage and bay leaves and cook 2-3 more hours. And like that....your meal is ready to serve.
Slice the corned beef and serve with all the yummy sides.

TODAY’S TIPS, TRICKS & TECHNIQUES
I don’t know about you, but, I have always found any piecing with triangles to be challenging at times, especially flying geese. There are many ways to sew flying geese and I have found that the way to have the least amount of waste is to start with squares. The example below can be adjusted easily to your desired size.
You need one square, the size of the finished width you desire the Flying Geese to be +1/1/4”, and four squares that are the height of the finished unit you want plus 7/8”. The instructions below will produce 4-3’x6’finished blocks.
- Place 2 dark 3 7/8” squares on opposite corners of the 7 ¼” light square and on the wrong side of the dark 3 /8” squares, draw a guideline from corner to corner.
- Sew a ¼” from the guideline on both sides. Cut apart.
- Press seams out. Place 1 dark square right side down and sew a ¼” from the guideline on both sides. Cut apart and press seam out. Repeat with the remaining unit. This will create 4 sets of flying geese.
