Culinary Corner - Seafood Corn Chowder Recipe
At the end of summer, who doesn’t love a showstopping corn chowder with seafood. This chowder recipe has its foundation in the traditional clam chowders of New England. It is modified a bit to include a variety of shellfish and roasted fresh corn, which adds a sweetness and texture that everyone loves. A steaming hot bowl of this authentic New England Chowder with a slice of cornbread is the perfect hearty meal for the Fall season.
Ingredients
· 6 strips finely chopped bacon
· 2 ears un-shucked yellow corn
· 3 ounces butter
· ½ pound onion, diced to about ¼ inch
· 2 ounces celery, diced to about ¼ inch
· ¾ TBSP chopped Garlic
· ¾ TBSP chopped Shallots
· 3 ounces all-purpose flour
· 1 cup clam juice
· 2 cups water
· 2 ounces clam base
· ½ tsp bay leaves
· 2 TBSP chopped fresh parsley
· ¼ tsp dried thyme
· ½ tsp salt
· ½ tsp white pepper
· ¾ pound potatoes, diced to about ½ inch
· 6 ounces bay shrimp
· 6 ounces chopped clams
· 6 ounces bay scallops
Directions
Place the corn on a baking sheet and roast in the oven at 375 degrees F until the husk turns dark brown and the corn is golden brown. Render the bacon completely in a pot on the stove over medium-high heat. Cook the bacon until crisp.
Once the bacon is done, add the butter and melt completely. Add the celery, onions, garlic, and shallots, and cook until tender (10 minutes). Add the flour and stir well. Cook for 15 minutes to form a roux. Add the clam juice to temper the roux. Add the water. Cook for 15 additional minutes.
After the corn has cooled, cut the kernels from the cob. Add the clam base, potatoes, corn kernels, and all seasonings. Simmer, stirring frequently, for 30 minutes or until the potatoes are done. Add the cream, seafood, and stir well.

Today’s Tips, Tricks & Tools
Recently I was visiting my quilting friend for a sewing day. She showed me a great tool for squaring up those half-square (HST) and quarter-square triangles and I can’t wait to share it with you! It’s called a Bloc-Loc. This amazing ruler made quick work of squaring up many HST in a Jiffy! The beauty of this ruler is an imbedded grid that adheres to the middle seam creating a non-slip cutting edge. It truly is remarkable!
It really is intuitive to use, but here’s a great instructional video by the designer, Janna Thomas.
